I think you can better afford to trade Conforto than Syndergaard as you are already down one starter. You still have McNeil, Nimmo, Davis, Smith and Cespedes.
I think I would have to agree with Reese at this point. Nobody ever mentions Scott Boras is his agent. The Mets will never be able to afford him. They should trade him now before they get nothing
If you can get rid of Ramos and get any type of return at all, do it. Then spend some money on Grandal or trade for a catcher that can play defense and who pitchers like working with.
I would be open to trading Conforto and Gimenez as well, perhaps together for a package centered on said catcher, and/or a starting pitcher (maybe plus a low-level high-ceiling prospect.)
I would consider trading rossario as the centerpiece to a lindor trade assuming you can come to terms with lindor. The hardest one to replace would be Syndergaard. I think we forget how important it is to have a player on the team who loves being in ny for good reasons. Not the matt harvey/Gooden reasons. I just kind of dig that.
I would trade Conforto (unless we can sign him to an extension this offseason, I doubt it because of Boras) to Padres (or similar loaded team) for as many quality pitching prospects as possible.
I would trade Peterson and Giminez for starling Marte
Trade Domininc Smith for more young pitching prospects (maybe the Rays are a fit)
I would include Gimenez in a package (also including Lowrie, Smith and Junior Santos or Tony Dibrell) for Betts, although the $15.6 million in net salary that the Mets would be taking on would probably eat up too much of their $20 million budget for this off-season.
Also Gimenez in a package for a CF like Starling Marte or Ender Inciarte. The Peerson & Gimenez for Marte mentioned by Zozo seems reasonable.
I would trade Ramos, but only after I was able to sign Grandal. Ramos to Texas for a couple of their MLB ready relievers, like Joe Palumbo and Rafael Montero.
Dom Smith should also be regarded as a trade chip, used for the best return, like a CF, (Betts, Marte, Inciarte) a reliever or a #5 starter.
Easily, I first choice would be Gimenez... for either a real CFer or SP.

I would keep what pitching we have.
